We are now working in the vineyards to turn over the soil because during the year we have compacted it passing over it with our machines. This is very important work because in addition to adding oxygen to the soil, the machine we use cuts the roots that are closer to the surface and insures the vines develop the roots that reach deeper into the soil. This is very useful because, in the drier vintages, the vine can find water in the deepest parts of the soil thanks to its deep roots.
